A while ago we had some green asparargus for lunch, together with some rice and other veggies. However, I managed to make some delish vegan asparagus soup from the leftovers:
Ingredients:
- Asparagus (as much as you want to have in your soup)
- plant margarine
- flour
- plant cream (as much as you want or how much soup you want)
1. Ideally you had asparagus the other day and only some leftovers, which are already cooked (that makes it even faster :) ). Otherwise cook the asparagus as usual until it's done.
2. In another pot add some plant margarine and wait until it's melted. Quickly, after the margarine is melted stir some flour in it, just so that it is smooth.
3. Then again, quickly, add the plant cream into it and start stiring fastly, with a whisk ( I think it works best with a whisk so that there won't be any blobs in the soup). Now, stir constantly until the soup starts boiling, then simmer it for about 5 minutes.
4. During the simmering start to flavor the soup, I added nutmeg, salt, cayenne and pepper.
5. Take the asparagus and chop it, just bite-size, add these to the soup.
After another 3-4 minutes of simmering your soup should be done :-)

Funny, I just wanted to add the picture I took from it...well I can't find it anymore. Epic. What do we learn from that? I don't know, maybe not waiting too long for food postings to be finished.
